Homemade Red Cabbage
There are few things that set the Christmas mood like the aroma of homemade red cabbage; the deep, sweet-sour taste makes it an indispensable side dish for the Christmas dinner. And when you make it yourself, you get a completely different freshness and fullness than the one you find in jars. Adam Price uses caraway seeds in his recipe, which is a tradition in his family – but if you're not into caraway, it can of course be omitted.

Ingredients

1 kg
red cabbage
100 g
butter
1 dl
lager vinegar
2 dl
conc. blackcurrant juice
1.5 tbsp
fat (from duck or pork roast)
1 tbsp
blackcurrant jelly (to taste)
6 whole
cloves
1 tsp
caraway seeds (can be omitted)
3 tbsp
sugar (to taste)
a little
salt (to taste)
a little
pepper (to taste)
Avoid screen shutting off

Instructions

Step 1/4
Cut the cabbage into very thin strips and divide it further into smaller pieces.
Step 2/4
Melt the butter in a pot and add the cabbage. Let the cabbage fry over medium heat, stirring constantly, until the cabbage has completely broken down.
Step 3/4
Add vinegar, blackcurrant juice, a little salt, sugar and spices. Cover with a lid and let the cabbage simmer very gently for at least two hours. Stir the red cabbage at regular intervals and add a little more blackcurrant juice or a little water if it boils dry.
Step 4/4
Then taste and adjust with blackcurrant jelly, a little cooking fat and possibly a little more sugar, salt and pepper.
