Labskaus - Danish sailor's stew
Labskovs is the epitome of classic Danish home cooking. A simple, filling stew where tender meat, potatoes and onions are boiled together and stirred into a rich whole. In Brian Mark's version, the focus is on fundamental craftsmanship and pure flavor. A dish that warms and brings together – perfect for cold days and best served with rye bread, chives and pickled beets.

Ingredients

1 kg
veal brisket
3 l
water
3
bay leaves
2
onions
3
carrots
1
leek
700 g
potatoes
4 g
butter
Chives
Salt and pepper
Avoid screen shutting off

Instructions

Step 1/5
Cut the veal brisket, one onion, carrots and leek into large cubes or pieces.
Step 2/5
Boil the brisket tender in water with bay leaves, 1 onion, carrots and leek for approx. 2.5 hours.
Step 3/5
Cut the potatoes and the last onion into cubes.
Step 4/5
Strain some of the stock, add the potatoes and onion, and boil the potatoes. Stir the dish together and finish with butter.
Step 5/5
Serve with coarse rye bread, beets, chives and coarse mustard.
