There are tomato sauces – and then there is this one. San Marzano tomatoes and passata are simmered with fresh basil, blended until silky smooth and finished with butter and Parmesan. Topped with cherry tomatoes that have been slow-roasted until caramelised and concentrated, this is a bowl of pasta that's hard to rush through.

Ingredients

400 g
mezzi paccheri
300 g
cherry tomatoes
500 g
San Marzano tomatoes
500 ml
tomato passata
4 tbsp
extra virgin olive oil, plus a little extra to taste
40 g
unsalted butter
60 g
freshly grated parmesan cheese
1 handful
fresh basil leaves
1 tsp
superfine sugar
Salt to taste
Black pepper to taste
Avoid screen shutting off

Instructions

Step 1/6
Preheat the oven to 110 °C.
Step 2/6
Cut the cherry tomatoes in half and place them cut side up on a baking sheet. Season with extra virgin olive oil, salt, black pepper and superfine sugar. Bake for approximately 1 hour, or until the tomatoes are lightly dried and caramelized.
Step 3/6
Heat the extra virgin olive oil in a large frying pan over medium heat. Add the halved San Marzano tomatoes and some of the cherry tomatoes together with a knife tip of salt and sauté until they begin to soften. Pour in the tomato passata and let it simmer gently for 30 minutes.

Remove the pan from heat, add the basil leaves and let them infuse for 10 minutes. Remove the basil leaves, then blend the sauce until smooth, and strain it through a fine sieve.
Step 5/6
Cook the pasta in salted water until it is al dente. Pour the drained pasta into the sauce and finish with butter, grated parmesan and fresh basil.
Step 6/6
Serve immediately and garnish the pasta with the candied cherry tomatoes.
