Quick, but incredibly delicious. This dish works wonderfully for both busy weekdays and when entertaining guests. The browned butter sauce is made with crispy panko, capers, cornichons and dill. It pairs really well with this. The cod can easily be substituted with other fish if you prefer.
Enjoy the dish optionally with new potatoes.

Butter and oil for frying

baby spinach
Salt and pepper

Instructions
Step 1/8
Chop capers and cornichons. Pick and chop the dill (save some for garnish).
Step 2/8
Brown the butter in a pot, remove the pot from heat, and add panko first. When it is golden, add capers and cornichons. Season with lemon juice, salt and pepper, and finally fold in the dill.
Step 3/8
Fry the cod fillets in oil for approximately 3-4 minutes on both sides, until they are nicely golden. Note that the cooking time may vary depending on the thickness of the cod fillets.

Add butter to the pan when one side is cooked, let it foam, and baste the cod fillets with the fat using a spoon while they finish cooking.

Sauté the spinach in butter in a pan until it wilts.
Step 6/8
Season with salt and pepper.
Step 7/8
Plate the spinach in a deep plate, top with cod fillets and then the butter sauce. Garnish with picked dill.
Step 8/8
Enjoy optionally with potatoes.
